Fabulous Faith Info: Age: 31 Hometown: Toronto, CN Occupation: Private Celebrity Chef Age you first started cooking: 5 Years Old Entree/Dessert: The Ricky Rosay Brief description of The Ricky Rosay: In honour of Rick Ross’s favorite dessert, I created this sandwich for his last visit to Toronto. The Ricky Rosay, a toasted honey bun topped with buttermilk fried chicken, cheddar cheese and spicy maple syrup. This entree/dessert goes well with…..: Anything, Anytime but I served it along side lobster mac & cheese bites. Ingredients: 6 Honey Buns (1 box), 200 grams grated cheddar cheese 2 Boneless Skinless Chicken Breasts, cut into large wedges ½ cup buttermilk ½ tsp pepper, salt and garlic powder 1 cup flour ¼ cup maple syrup 1/8 cup Louisiana style hot sauce Directions: *Place the chicken in a bowl and coat with spices, pour over the buttermilk *Allow the chicken to sit in the fridge for 15 – 45 minutes to marinade *Put the flour in a separate bowl and dredge the marinated chicken to coat *Heat two inches of cooking oil in a small pot *Once the oil is hot fry the chicken until golden brown and crispy *Take the Honey Buns out of the box and wrapper *Cut in half and toasted lightly until slightly brown in a non-stick pan (icing side up) *Combine the syrup and hot sauce in a small bowl *Top the bottom of the toasted honey bun with a few pieces of chicken *Layer with cheddar cheese *Drizzle with Syrup *Replace top of bun to create the ultimate sweet savoury sandwich, The Ricky Rosay Prep.
